Old Bay Chicken Nachos

These nachos are very yummy and I use marinated chicken with a homemade cheese sauce infused with old bay.


Servings: 2 - 4
Prep Time: 1 hour
Cook Time: 18 minutes
Total Time: 1 hr 18 min

Ingredients:

1 bag of Tortilla chips or Doritos

Toppings

Tomatoes and the rest is up to you, I also love to use cooked shrimp for this recipe.

Ideas: Jalepenos, onions of any kind, beans, lettuce, olives, pico de gallo, salsa, cilantro, guacamole, sour cream, hot sauce, rice, verde sauce, corn

For Chicken

1 1/2 boneless skinless chicken breasts thinly sliced in small pieces.
1 Tbsp fresh lime juice
1 Tbsp olive oil
1 Tbsp fresh finely minced garlic
1 tsp salt
1 tsp pepper
2 tsp ground cumin
2 tsp paprika
2 tsp chili powder
1 tsp onion powder

For Cheese Sauce

1/2 cup shredded cheddar cheese
1/2 cup mozzarella or pepperjack cheese
8 oz cream cheese
about 1 cup of milk
2 Tbsp franks hot sauce
1 Tbsp Old Bay

Directions:

Place chicken, garlic and oil along with all the seasonings in a bowl and mix until all the chicken you sliced up is all coated. Its good to cut the chicken thinly at a 90 degree angle. Cover and marinate this in the fridge for at least an hour for best results.

In a small to medium pot put your heat on medium low and add in the cream cheese with about 1/4 of the milk mixture and let this slowly melt while stirring occasionally. Once melted add in the shredded cheese. Once the cheese starts to melt you will see its really thick then just add the rest of the milk a little at a time until its gone.

You want the sauce to be somewhat thing but not runny, you also don't want it to be too thick and stringy so add milk accordingly. Once the sauce is smooth add in the hot and old bay and mix well. Serve over tortilla chips and keep the cheese warm over very low heat, if you want to reheat just add a little milk and stir over the stove top.
